These protein-packed healthy muffins make a great start to your day. Use whatever berry is available to you. They store great in the freezer.

Ingredients
1cupalmond butter
1cupalmond meal/almond flour
3eggswhisked
1/4cupXylitol
2packets of Steviapreferably with LoHan by KAL
1/3cupcoconut oil melted
1teaspoonvanilla powderI use this, because it has no sugar in it or 1 teaspoon regular vanilla
1/2teaspoonbaking soda
1/2teaspoonbaking powder
1/4teaspoonsea salt
3/4cupfresh blackberriesblueberries or raspberries
Instructions
Preheat your oven to 350 degrees.
Mix all ingredients together in a bowl. If you’re good at baking, you’ll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works.
Put a couple of tablespoons of batter in a muffin tin greased with coconut oil, or use muffin liners.
Bake for 15-20 minutes.
Recipe Notes
If you are using big berries, cut each berry in half. One half cup raw honey can be substituted for the Xylitol and Stevia. Cook time:15-20 mins. Serves 8
