I am sure you guessed correctly, as we love our comfort foods, especially during this chaotic time. And potatoes sure fill the bill.

The number one produce item sold this year is specifically the Dutch Yellow Potatoes or DYP’s. These golden gems have a rich texture with a mixture of buttery and nutty flavors and the perfect amount of starchiness.

You can essentially do anything with this variety; bake, broil, roast, grill, simmer, steam, sauté or boil them. I always have them on hand for an easy and delicious side dish like this recipe.

A few simple, yet quality ingredients is all you need for this satisfying recipe.

Roasted Potatoes with Caramelized Leeks

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 4

Ingredients

  • 1 1/2 lbs. Dutch Yellow Potatoes washed and halved
  • 2 tbsp. Extra Virgin Olive Oil divided
  • Kosher Salt & Ground Black Pepper to taste
  • 1 tbsp. Unsalted Butter
  • 2 Leeks sliced
  • 2 sprigs fresh Rosemary stems removed

Instructions

  1. Preheat the oven to 425ºF
  2. In a bowl, toss the potatoes with 1 tablespoon of the olive oil and season with salt and pepper
  3. Place the potatoes, in a single layer, on a baking sheet and place in the pre-heated oven
  4. Roast until fork tender, about 12-15 minutes
  5. While the potatoes are cooking, heat the rest of the olive oil and butter in a sauté pan
  6. Add the leeks and caramelize them. Add the rosemary and cook for 1 minute
  7. Toss with the roasted potatoes and serve

      Me too! My grandmother used to make a delicious potato and leek soup. It is a fond childhood memory for me, so naturally I gravitate towards this combination.

    Lots of potatoes on that list! I’ve started embracing potatoes mor in my old age. I still have to watch carbs, but I finally had the realization that I really love potatoes. I’ll just cook one, and have it warm with butter and a slice of good cheese. But, I love your dish with the leeks. Divine!

      Yes, there is something magical about the humble potato that we just can’t walk away from. Potato, butter and cheese is always a winner combination for me as well.
